Strawberry Basil Coconut Ice Cream

Vegan, GF, DF, Paleo, AIP


Happy Summer Ya'll! Something about Strawberries and Basil scream summer.

Keep in mind Vegan homemade ice cream is not as creamy or easy as easy scoop.


Here's the Recipe:

1 1/2 cups coconut milk (full fat)

2 1/2 cups frozen strawberries

1/2 cup maple syrup

pinch of salt

1 tsp vanilla

1/2 cup fresh basil


Directions:

5 minute ice cream: In a high powered blender combine all the ingredients and blend until in ice cream form. If it is still not quite thick enough, put in the freezer for 20/30 mins, take out and stir, continue to do that until it is thick enough to scoop with an ice cream scoop.


With an ice cream machine: Instead of frozen strawberries, use fresh and then blend in your high powered blender. Place the mixture into the ice cream machine. Follow the directions of the ice cream maker.


This ice cream is next level with a paleo brownie!!
