Thai Ginger Stir fry

GF, DF, AIP, Paleo, SCD, Whole30 approved, Candida Approved, low-carb

Here's the recipe:

Serves 6, about 20 minute to make!

  • 2 tbls avocado oil

  • 1/2 onion

  • 2 cloves garlic

  • 2" thumb ginger

  • 2 carrots

  • 2 Tbls coconut aminos

  • 1 tsp salt

  • 1 lb ground pork

  • 2 heads broccoli

  • 2 baby bok choy

  • 1 lime

  • 4 zucchini

  • Cilantro for topping


  • Dice the onion, peel and mince the garlic & ginger, peel and chop the carrots. Sauté on med/high heat the oil, onion, garlic, ginger and carrots. Add in the meat, coconut aminos and salt. Once the meat is almost cooked through, add in the broccoli and bok choy (the white parts first), allowing them to cook down a little, then add in the greens, squeeze the lime, and stir in. Once the greens are cooked down turn off the heat

  • With a spiralizer, make zoodles with the 4 zucchini. These stay raw and are the base of your meal.

  • Add some zoodles to a bowl with the sautéed portion and top with cilantro!
