Loaded Sweet Potato Fries

Paleo, Gluten free, nightshade free, grain free, dairy free, whole30

Prep time: 5-10 mins

Cook time: 45mins -1 hr

Servings: 5-7

Rate: easy

Recipe:

2 large white sweet potatoes

2 Tbls Avocado oil

2 tsps Pluck All-Purpose Seasoning

Directions:

Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Peel the potatoes, and slice into fry shape. Place the fries on the baking sheet. Drizzle the avocado oil and seasoning over the fries, with your hands be sure everything is mixed evenly, and fries are spread out. Bake in the oven for 30 minutes, take them out and turn them, place them back in the oven for another 15-30 mins, they should be mostly crispy by this point, a perfect fry texture.

Alternative directions would be to cook in your air fryer, this takes much less time! Depending on the size of your air fryer you may want to half the recipe so the fries cook evenly.

Make them loaded!

  • Bacon Bits

  • Avocado

  • Cilantro or green onion

  • Super Belly Ferments Ranch Dressing

  • Amelia's "Cheese" Sauce: 1/2 cup coconut milk & 1/4 cup nutritional yeast

For the cheese sauce:

In a pot on your stove top, on medium heat whisk the coconut milk and nutritional yeast until it thickens (about 4-5 mins).

Assemble!

Layer 1: Pluck Sweet Potato Fries

Layer 2: Bacon bits

Layer 3: Avocado

Layer 4: Cilantro or green onion

Layer 5: Ranch dressing or "Cheese" sauce, or both!

Enjoy!

Amelia
