RECIPE:
For Zoodles:
1 zucchini
The Sauce:
1 Tbls avocado oil
1/2 onion
3 garlic cloves
1 tsp salt
1/2 tsp dill
zest & juice of 1 lemon
1/2 cup coconut milk
1/2 cup cauliflower (or sweet potato for a sweeter version)
The salmon
1 Tbls avocado oil
3-4 pieces of salmon
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
sprinkle of dill
squeeze of 1/2 lemon
dashes of lemon zest
Directions:
In a skillet sauté the oil, onion, garlic and cauliflower until cooked through. Add skillet contents to blender with all the other sauce ingredients and blend until smooth.
In the same skillet sprinkle the oil and put the salmon on. Top the salmon with all the ingredients, you shouldn't need more than 10 mins for the fish to cook, once white starts seeping through the fish it is cooked.
With a spiralizer, make zoodles with the zucchini.
Portion out the zoodles, top them with the salmon and drizzle the sauce over the dish.
And Enjoy!
