Acorn Squash Soup

GF, V, DF, Paleo, AIP


Here's the recipe!


2 acorn squash

1 cup of water for instant pot

1 onion

3 garlic

1 Tbls avocado oil

1 8oz can of coconut milk

2 cups of water (or bone broth if you aren't vegan)

1 tsp salt

1/2 tsp cinnamon

1/2 tsp ginger

1 tsp fresh or dried parsley


Directions:

• half the acorn squashes, de-seed and put all 4 halves in the instant pot for 15 mins with 1 cup of water.

• while that is cooking, saute the chopped onion and garlic with avocado oil.

• scoop out the acorn squash flesh and put in blender with all other ingredients. blend until smooth and serve.


serves 4-6
